For crumb base : throw the cookies & melted butter into a food processor & chop fine. Spoon some into bottom of serving glasses. Set aside.

For the pudding: combine the sugar , cornstarch, salt in a saucepan. Stir to whisk. Pour the milk & egg yolks & whisk together. Add vanilla bean. Stir over medium heat until mixture comes to a boil & becomes thick. 6-8 minutes. Maybe less , maybe more. The second it starts to bubble. Remove from heat. Add white chocolate & butter. Stir until everthing is combined.

Pour the pudding into the glasses on top of crumbs. Serve warm or chilled . Chill 2 hours. Decorate with grated chocolate on top. ( I got 6 )...
