I'm a big Gordon Ransay fan, but his recipe was in metric units. I've converted the units and tweaked them a bit to my liking. These are really delicious, but not the best if you're on a diet!

Ingredients

  1. 1 cupButter
  2. 1 1/3 cupBrown Sugar
  3. 1 pinchSalt
  4. 1 tspVanilla Extract
  5. 2Eggs
  6. 1 1/4 cupFlour
  7. 1/2 tspBaking Soda
  8. 1 tspBaking Powder
  9. 1 cupWhite Chocolate Morsels
  10. 1 cupDried Cranberries

Cooking Instructions

    Preheat your over to 350° F and place enough parchment paper in an 8 inch x 8 inch square cake tin to cover the bottom and sides

    Melt the butter in a saucepan

  3. 3

    Once the butter is melted, whisk in the sugar and salt

  4. 4

    Add the vanilla extract to the mix. Once mixed, remove from the heat and pour into a larger mixing bowl

  5. 5

    Add the eggs to the mixture and whisk again

  6. 6

    Add the baking soda, baking powder and 1/2 a cup of the flour to the mixture and mix thoroughly. It is important to add the flour in stages to prevent lumps

    Add another 1/2 a cup of flour to the mixture and whisk thoroughly

  8. 8

    Add the final 1/4 cup of flour to the mixture, or enough flour so the batter just drops off the whisk

  9. 9

    Wait for the mixture to cool a little before adding the chocolate and cranberries. You don't want the mixture to be so hot that it melts the chocolate

    Use a spatula to mix the chocolate and cranberries to the mixture. A spatula is much easier to use then a whisk

  11. 11

    Scoop the batter into the cake tin and spread it evenly throughout the inside

  12. 12

    Bake in the oven for 35-40 minutes. I prefer only 35 minutes as I like the insides of the blondies to be nice and gooey

    Let the blondies cool for at least 10 minutes before slicing

There are a number of things in this recipe that differ from Gordon's recipe. Here's his video: https://www.youtube.com/watch?v=4icuhC1q1c81) Gordy uses granulated sugar, not brown, 2) Gordy melts butter then adds it to the sugar in a separate bowl, doesn't wisk these on the stove together. These make a big difference in the outcome. This recipe is darker and bread-like, not light and dense like Gordy's.
