This sandwich was so good. The pesto combined with the tuna balanced well. The avocado and English peas added to the flavour profile. I think I used the right amount of each ingredient as not to overwhelm anyone thing making it a one note flavour.I had plenty leftover for more sandwiches at least 6 sandwiches in total. Just add bread.

This is almost exactly how I make my tuna salad! Aside from using tuna meat instead of chickpeas, the only other difference here is the vegan mayonnaise. When I am not preparing vegan I prefer to use miracle whip but I also use regular mayonnaise as well. For this recipe, I used canned chickpeas for convenience, but if you have chickpeas cooked from scratch that works, too. I love that you can use this for so many different things. The spicy is a personal preference and of course can be optional. Red grapes can also be substituted with green grapes, raisins, or even cucumber!
