Wash the potatoes and then put them in a pan and cover with water ( note I did not peal the potatoes. You can if you want to. I take the skin off the potato after I cook it)

Set potatoes aside while you prepare the meat

Cook on high until tender and done. (Note: I stick a fork or a knife in the potato and if it comes out of the potato Easy then it is done)

In pan put 4 tablespoons of olive oil in pan

Put in the chilli peppers ( note: I only cut the stem off the chili peppers when cooking. Because I will take the pepper out before filling the samboosa leaves)

Add chopped onions bell pepper and garlic cloves cooking on medium high and stir constantly

Add seasonings and keep stirring

Add meat keep stirring on medium high

Add mixed vegetables and spinach keep stirring and cooking on medium high

Now take your cooked pealed potatoes and crumble them up or cut them up and put it in the mixture. Keep stirring constantly and cooking on medium high heat

Keep stirring constantly on medium high heat and cooking for an additional 20 minutes (note the mixture will be thick)

Set aside and let cool a little ( note you can make this mixture the night before and then fill the samboosa leaves the next day)

Now filling 5 he samboosa leaves

Get water handy in a bowl ( this is used to keep plate moist and hands moist for easy folding of the leaves

Put a few sprinkles of water in a plate and put a samboosa leaf on top sometimes I use 2 leaves at once if I am stuffing lots of filling inside

Fold up one end into a cone shape

Put filling in it and some cheese in it ( note: any cheese you like I use cream cheese in some and cheddar cheese in some any kind you want)

Fold the end to seal and put on plate covered with damp cloth so it does not dry out while you fill the rest

For frying fry in olive oil till golden brown I use olive oil cause it is healthy and taste great

You can bake it if you do not want to fry it just rub sides with olive oil and bake in oven on 350 Celsius until golden brown

Remove and serve
