A good, and healthy-ish side dish. Also perfect as a light lunch.

Ingredients

  1. 4 slicesbacon
  2. 2 bunchesBok Choy
  3. 1 tbspolive oil, extra virgin
  4. 1 mediumonion, diced
  5. 1 tspred pepper flakes, optional
  6. 2garlic cloves, finely chopped or minced
  7. salt

Cooking Instructions

    Cut the bacon into diced pieces.

  2. 2

    In a skillet fry the bacon over a medium heat until its crispy.

  3. 3

    Cut the bok choy into medium pieces.

  4. 4

    Put the bacon on a paper towel and set aside.

  5. 5

    Add the olive oil to the skillet and reduce heat.

  6. 6

    Sauté the onion, garlic and if using red pepper flakes until the onion has softened.

  7. 7

    Add the bok choy.

  8. 8

    Cover and cook over low to medium heat for about 5 minutes.

  9. 9

    Remove lid, stir and let it cook for a few minutes.

  10. 10

    Add the bacon back to the pan and stir.

  11. 11

    Check seasoning is okay.

  12. 12

    Serve immediately.
