Ingredients

8 servings
  1. 200 gramsbutter
  2. 200 gramscaster sugar
  3. 200 gramsself raising flour
  4. 4eggs
  5. 1 tbspvanilla extract
  6. strawberry jam
  7. 175 mldouble cream

Steps

  1. 1

    Cream butter and sugar together until light and fluffy

  2. 2

    Add in the flour and eggs (a little at a time) and the vanilla extract, mix together until all the ingredients are thoroughly mixed

  3. 3

    Pour mixture evenly into 2 greased round cake tins and cook at 180°F for 20 minutes or until golden

  4. 4

    Once the cake is cooked and cooled thoroughly, whisk the cream until quite stiff and spread on one half of the cake. Spread the jam on the remaining half and place on top.

  5. 5

    Dust with icing sugar and serve as required
