My husband always wants his Granny's Sweet Potatoes on Thanksgiving and Christmas. However, there was no recipe for it as she never used them. After a few years of brainstorming with him and his family, this recipe was the result. Hope you enjoy it as much as we do.

Ingredients

  1. 4sweet potatoes (large)
  2. 1water (to cover)
  3. 1 tbspbutter
  4. 1 cuppeanut butter (creamy)
  5. 1 tbspmaple syrup
  6. 1 tbspvanilla extract
  7. 1/2 cupbrown sugar
  8. 1/4 cupgranulated sugar
  9. 1 packagesmini marshmallows

Cooking Instructions

    Peel and cut up sweet potatoes into 2-3 inch chunks (much like you would when making mashed potatoes). I usually slice them every 2-3 inches and then quarter each slice. Uniformity isn't necessary, as they'll break down a bit while cooking.

    Throw the sweet potatoes into a large pot and cover with water. Add the butter.

    Bring to a boil over medium-high heat for about 20-30 minutes (time depends on size of chunks). They are done when you can easily stick a fork through them. Don't overcook.

    Drain about 3/4 of the water from your pot and return to stove. Add all ingredients except for the mini marshmallows.

    Stir until mixed well. Turn heat down to low. If it seems like enough water wasn't drained and is a bit runny, add some more peanut butter to help thicken it (you may also want to add a little more maple syrup to taste). Add mini marshmallows (enough to cover...I only use about halfe the bag), cover, and turn off heat after a few minutes.

    Once marshmallows have melted a bit, they are ready to serve. Enjoy!
