2 cupsL/O cooked rice
3eggs, beaten
1/3 cupsugar
1/4 tspsalt (optional)
2 cupsmilk
1/2 cupraisins
1 tspvanilla extract
1/4 tspcinnamon or nutmeg

In a 2 quart microwavable casserole or bowl, mix beaten eggs with milk, sugar and salt.

Stir in rice, raisins and vanilla.

Cook uncovered on high 8-10 minutes. Stir every 1-2 mins.

Sprinkle with cinnamon or nutmeg and let stand 3o minutes, without stirring. Serve warm or chilled.

Am an Army Vet who served as a cook for 8 years. Went to the Persian Gulf and spent 2 years in Seoul Korea. Have been a widow for 3 yrs, so don't really get to cook as much as I would like to. Now about the only time I get to "shine" in the kitchen, is when we have something at the local VFW Post. As you can see, I have 2 boys who keep me company and take up much of time.
