Here is a pocket snack soldiers and farm workers use to get through the day. I made a smaller version for kids, egg size balls instead of big peach size ones.One part chicken, one part veggies, one part rice boiled in coconut milk, soy sauce and palm sugar, then stir fried, then coated with a breaded egg crust, deep fried into hush puppy balls, delicous cold. Cooked once a week, fresh in the fridge for a week. Freezes well up to a year.

Honestly, the day of the week has nothing to do with this recipe. I just wanted a better name than 'Shrimp Linguine,' and I happened to make it on a Saturday night. Lazy naming aside, this dish was also one of the most successful of late. My daughter loves both shrimp and noodles, so she was always a guaranteed slam dunk. My wife, however, isn't as crazy about shrimp, and yet she polished off two big servings. Hooray for Saturday Night Pasta!

My daughters love this school lunch, so she asked me to make it at home. I had a chance to try the school lunch version, and it was really easy to eat, so I tried making it myself with my daughters' advice.Prep the simmered ingredients beforehand properly by draining excess oil, parboiling, etc. If the potato pieces are too small, they will melt into the soup. If you want the potato pieces to retain their shape, put them on top of the pot at Step 5. But I think they taste great if they've partially crumble and blending with the other ingredients. I like to food prep every thing and cut all of the veggies and use the snackle box and set up for the board is a snap 🫰 . Subway or Jersey Mike’s at home .I like to get my hoggie buns from sams club so i have extras to roll into lunches for the week with any leftover. ( I did use my bento containers for this night as pictured it was perfect for just the subs & chips was out of paper plates)
