Mosa
I have a small chop business and one of my favorite is the mosa.
Steps

Add 2tsp of water to your yeast in a cup and mix it to dissolve very well and put away.

Peel your plantains and mash it with a fork very well and you can blend them too if you want a smooth paste.

Sieve your flour and baking powder together then add in your salt and mix it.

Add your yeast to your flour and add little water to it. Add in the mash plantain and mix together.

Cover it and let it rest for 3mins before you fry, your plantain Mosa is ready.
