Ingredients

  • 1green papaya, medium-size, grated
  • 1red pepper, sliced in strips
  • 1green pepper, sliced in strips
  • 1 smallcarrot, sliced in strips
  • 1 smallginger, cut in strips
  • 1big onion, peeled and sliced
  • 3 tbsprock salt
  • 3 cupvinegar
  • 1 1/2 cupsugar
  • 2 tspsalt

Steps

1 hour 15 mins
  1. 1

    Squeeze all the vegetables in rock salt. Let stand for 1 hour then press out liquid. Place all the vegetables in a bowl or sterilized jar.

  2. 2

    Combine vinegar, salt and sugar and cook over medium heat til boiling. Remove scum. Let it boil for another 2-3 minutes then pour into container with vegetables.

  3. 3

    Note: If achara is to be stored, seal container immediately.
