Steps

Squeeze all the vegetables in rock salt. Let stand for 1 hour then press out liquid. Place all the vegetables in a bowl or sterilized jar.

Combine vinegar, salt and sugar and cook over medium heat til boiling. Remove scum. Let it boil for another 2-3 minutes then pour into container with vegetables.

Note: If achara is to be stored, seal container immediately.
