Watercress Cauliflower Soup

Ingredients

  1. 4 cupFresh watercress
  2. 1 headCauliflower florets
  3. 2 cupReduced sodium chicken broth
  4. 2 cupWater
  5. 1 tbspOrganic Ghee Butter
  6. 1/2 cupChopped onions
  7. 1Salt
  8. 1Pepper
  9. 1 tbspUnbleached flour or any organic flour of choice

Cooking Instructions

    Melt butter in medium saucepan and chopped onions until tender and translucent (about 3 minutes)

    Add flour to onion and mix (about a minute)

  3. 3

    Add chicken broth and cauliflower florets. Let it boil.

  4. 4

    Once boiled, lower heat and let it simmer (about 15-20 mins)

  5. 5

    Once the cauliflower is tender, add the watercress. Let it cook for a minute, until watercress is wilted.

    Either transfer soup to blender or use immersion blender. I had to transfer it to a blender in two separate batches.

    Add salt and pepper to taste and blend until smooth.
