Drunken Mama Noodles (Pad Kee Mao Mama)

Boil the instant noodles until just tender but still firm. Drain and set aside. Pound the chilies and garlic together in a mortar and pestle.

Wash the Chinese broccoli thoroughly and cut into bite-sized pieces. Rinse the green peppercorns and Thai basil leaves. Slice the pork sausage, hot dogs, and imitation crab sticks.

Heat a wok and add vegetable oil. Once hot, add the pounded chilies and garlic. Stir-fry until fragrant. Add the pork sausage, imitation crab sticks, and hot dogs. Stir-fry until cooked through. Add the Chinese broccoli and green peppercorns, and continue stir-frying. Add the water, seasoning sauce, MSG (if using), sugar, fish sauce, and dark soy sauce. Stir to combine. Add the cooked noodles and toss everything together. Add the oyster sauce and Thai basil leaves. Mix well and stir-fry until fragrant. Transfer to a plate and serve immediately.
