Ingredients

  1. 2 packsinstant ramen noodles
  2. 1/2 blockVietnamese pork sausage (gio lua)
  3. 4 piecesimitation crab sticks
  4. 4 pieceshot dogs
  5. 1 handfulfresh Thai basil leaves
  6. 2 stalksChinese broccoli (gai lan)
  7. Fresh green peppercorns, to taste
  8. 20Thai bird’s eye chilies
  9. 1 clovegarlic
  10. 3 tablespoonsseasoning sauce
  11. 1 pinchgranulated sugar
  12. 1 tablespoonfish sauce
  13. 1 tablespoondark soy sauce
  14. 2 tablespoonsoyster sauce
  15. 1 pinchMSG (optional)
  16. 1/2 cupwater (120 ml)
  17. Vegetable oil for stir-frying

Steps

  1. 1

    Boil the instant noodles until just tender but still firm. Drain and set aside. Pound the chilies and garlic together in a mortar and pestle.

    Wash the Chinese broccoli thoroughly and cut into bite-sized pieces. Rinse the green peppercorns and Thai basil leaves. Slice the pork sausage, hot dogs, and imitation crab sticks.

  3. 3

    Heat a wok and add vegetable oil. Once hot, add the pounded chilies and garlic. Stir-fry until fragrant. Add the pork sausage, imitation crab sticks, and hot dogs. Stir-fry until cooked through. Add the Chinese broccoli and green peppercorns, and continue stir-frying. Add the water, seasoning sauce, MSG (if using), sugar, fish sauce, and dark soy sauce. Stir to combine. Add the cooked noodles and toss everything together. Add the oyster sauce and Thai basil leaves. Mix well and stir-fry until fragrant. Transfer to a plate and serve immediately.
