Horseshoe Cheese Sauce
This is the original recipe from the Leland Hotel in Springfield, IL according to the Illinois Times to top a horseshoe open face sandwich platter. Make sure not to use pre grated cheese as it doesn't melt as well. The beer should be strong and hoppy like an IPA or other ale.
