Ingredients

  1. 1 tbspOlive Oil
  2. 1 tbspButter
  3. 1 mediumYellow onion
  4. 1 tspCumin
  5. 1 tbspCoriander
  6. 1 eachClove
  7. 1 lbGround beef
  8. 28 ozCanned whole tomatoes
  9. 32 ozCanned kidney beans

Cooking Instructions

    Combine butter and olive oil in a sauce pot over medium low.

    Slice onion and add to the pot. Stirring periodically, cook the onion to a very light caramel.

    Meanwhile, heat spices gently in a pan, just until fragrant, then grind finely and stir into caramelized onions to toast gently just before adding ground beef.

    Add ground beef. Stir over medium heat until browned.

    Add canned tomatoes. Simmer gently for about 45 minutes, stirring occasionally.

    Drain and rinse kidney beans and add them to the pot. Simmer for about 15 minutes.

    Season with salt and pepper and serve, ideally with a big chunk of fresh cornbread.
