Ingredients

4 servings
  • 3 tbspof oil, divided
  • 500 gramsof beef chuck
  • 2 mediumsized potatoes, cut in 1-inch cubes
  • 2 tbspof mussaman curry paste
  • 1 cupcoconut cream
  • 1 cupcoconut milk
  • 1/2 cupwater
  • 1/2 cupof cashew nuts
  • 2cinnamon sticks
  • 3bay leaves
  • 1/2 tspof ground cardamom
  • 1 tbspof brown sugar
  • 1 tbspof fish sauce
  • 1 tbspof tamarind concentrate
  • 1 tspof garlic-ginger paste
  • 1/2 tspground coriander seeds
  • 3shallots thinly diced
  • 1 tbspof corn flour

Steps

  1. 1

    Brown the beef with 1 tablespoon of oil and keep aside on a plate.

  2. 2

    In a pot, heat the remaining oil on medium heat and add the curry paste. Cook for 1 or 2 minutes, stirring frequently.

  3. 3

    Add the cinnamon, bay leaves, garlic-ginger, coriander and cardamom.

  4. 4

    Add the shallots and cover with coconut cream

  5. 5

    Cook for 10 minutes stirring often, so the mix doesn't burn.

  6. 6

    Add all the coconut cream and milk, reserving 1/4 cup of the coconut milk aside.

  7. 7

    Add the beef, the potatoes, the fish sauce, the tamarind, the sugar and the cashew nuts

  8. 8

    Mix the 1/4 cup of coconut cream with the corn flour

  9. 9

    Cook for an hour on low heat, covered.

  10. 10

    Before serving, add the corn flour mix and cook for another 10 minutes
