Even in summer I can crave this full of flavor pasta dish. Cheesy from a four cheese blend, quick to make. Delicious any time of year. Grab a glass of wine and enjoy!

Ingredients

30 mins
6 servings
  1. pasta
  2. 1 lbmild italian sausage links cut into 1/2 " slices
  3. 15 cupbaby kale, cleaned and dried
  4. 1 largered onion, cut in half then cut into thick slices
  5. 1 lbdry pasta, cooked to package directions. I used small elbow
  6. 1 tspgarlic powder
  7. 1 1/2 tspsalt
  8. 7grinds of fresh ground pepper
  9. 1/2 cuphot water to deglaze pan
  10. 3/4 cupextra virgin olive oil
  11. 1 1/2 cupfour cheese blend shredded cheese( parmesan, provolone, romano, mozzarella)
  12. 1 tspoil to saute sausage

Cooking Instructions

30 mins
  1. 1

In a large dutch oven, I used a ceramic coated cast iron one, add 1 teaspoon oil.

  2. 2

Set temp to medium. Once oil is hot, add in sausage chunks. Don't stir.

  3. 3

    Place onion slices on top.

  4. 4

Let cook for 5 minutes without stirring. You are getting a good brown on the sausage. It is not mentioned in ingredients but you may now sprinkle a small amount of red pepper flakes on top of onions at this point.

  5. 5

Take water and deglaze pan, scrapping up any brown bits on bottom.

  6. 6

Top onions now with kale, salt , pepper and garlic.

  7. 7

Turn temp to low and cover to wilt kale.

  8. 8

In the meantime, pasta should be cooking and just about ready to drain.

  9. 9

Cook kale about 6-7 minutes until fully wilted. Turn off heat and add one half of shredded cheese. Stir.

  10. 10

Add cooked drained pasta. Top with olive oil and rest of cheese.

  11. 11

Stir then serve nice and hot!
