I make this paella for kids who just want rice and nothing else.
Steps

Heat a small paella pan or a large skillet over medium heat and add the olive oil.

Peel the garlic, removing only the white skin, and wash and slice the bell pepper into strips.

Once the oil is hot, add the garlic and bell pepper. Sauté, then remove them and set aside in a bowl.

Add the cocido broth to the pan and bring it to a boil. Add the rice, a pinch of food coloring or saffron, optional pepper, and a little salt. Taste the broth first (you can add more salt up to ten minutes before it's done).

Boil for 10 minutes, then add the garlic to the center and arrange the bell pepper on top.

Continue boiling for another 6 to 7 minutes, until the broth is absorbed.

Tip: If you want the rice to be fluffier, cover with aluminum foil for 5 minutes before serving. Enjoy!
