Ingredients

  • 4 eachDried Fish
  • 3 cloveGarlic
  • 10 eachThai Chili Peppers
  • 2 sliceGinger Root
  • 1 tspSalt
  • 1 tspCrushed Red Chili Pepper
  • 1 tspFish Sauce

Steps

  1. 1

    Broil ingredients over hi heat for 5 mins on both sides or until charred

  2. 2

    Add salt to mortar

  3. 3

    Peel garlic and add to mortar

  4. 4

    Chop ginger root and add to mortar

  5. 5

    Pound ingredients until it is a pasty condition

  6. 6

    Remove stems from Thai chili peppers and add to mortar

  7. 7

    Add crushed red chili pepper to mortar and toss with spoon

  8. 8

    Add fish to mortar and pound fish until bones are incorporated

  9. 9

    Add fish sauce to mortar and toss with spoon
