Vietnamese Beef and Lemongrass Skewers

One of my favorite cooks, Jackie M, posted this recipe recently on Google+.

And as expected, this turned out to be an easy dish but with incredible taste. You don't have to use Lemongrass skewers, but it's a nice touch (and less cleaning afterwards),
PS: Lemongrass, Hoisin and Sriracha are essential to this dish though!!

Ingredients

  1. 24 ounces/ 650 g minced beef
  2. 7 ounces/ 200 g minced chicken
  3. 4 Tablespoonsminced garlic
  4. 1 Tablespoonminced lemongrass
  5. 2 Teaspoonssugar
  6. 1 Teaspoonpepper
  7. 1 Tablespoonfish sauce
  8. 1 Teaspoonchicken powder (you can use a mix of Cumin, Paprika and Thyme)
  9. Hoisin Sauce
  10. Vegetable Oil for brushing
  11. Sriracha
  12. Optional: Baguettes

Cooking Instructions

  1. 1

    Combine and mix all ingredients- except, oil Hoisin and Sriracha - well and let it rest for 20 minutes

  2. 2

    Divide into 12 portions. Mould into sausage shapes wrapped around lemongrass stems (or regular skewers).

    Brush with oil, then grill on medium heat for 6 minutes

  4. 4

    Remove from lemongrass stems and place 2 pieces on baguette

  5. 5

    Drizzle with hoisin and chilli sauce, and serve.
