Ingredients

4 servings
  • 6eggs
  • 1/2onion, chopped
  • 1/4 cupbutter or vegetable oil
  • 6pre-cooked Sausage links cut up
  • 2fresh or pickled Jalapeños sliced
  • 1salt and pepper to taste
  • 1/3 cupshredded cheese

Steps

  1. 1

    Saute onions in skillet with butter or vegetable oil

  2. 2

    Add whisked eggs and cook for 3 minutes until eggs begin to fluff

  3. 3

    Add sausage to skillet and cook till eggs are done and sausage is warm

  4. 4

    Add shredded cheese and remove to plate

  5. 5

    Add as many jalapenos as you want to the top of the eggs

  6. 6

    Jalapenos can be substituted with salsa if desired
