This is again one of my mother's recipes, which I learnt from her sometime ago.
Calamari in Tomato Sauce
This is again one of my mother's recipes, which I learnt from her sometime ago.
Cooking Instructions

Prepare the squid if using whole, cut into circles.

Heat the olive oil on a medium heat.

Add the onion, garlic and bay leaf. Fry for about 3-4 minutes or until lightly browned.

Add the chopped tomatos, salt and chilli pepper. Cover with lid and simmer for about 5-10 minutes. If using add sugar aswell as the creole.

Lower the heat slightly and add the calamari rings.

Let it simmer for around 15-20 minutes.

Add the wine and cook for a further 35-40 minutes or so on a low to medium heat. Stirring regularly.

Add water as and when it starts to dry. You may not need to use it all.

Add the parsley about 5 minutes before heat is turned off.

Check seasoning and rest for 5 minutes before serving.

Squid/ Calamari is one of my favorite things to eat. Only if it is cooked right. I used to buy squid for my pops a few times a year and he would make a delectable calamari in a tomato sauce. They all failed. Too tough. Too fishy. Etc, etc, etc. Finally, my wife suggested that we should just let it cook for a long time. Who am I to say no to my wife and dad?We did just that, with some carrots. Wow! Not what my dad made, but he would have loved it nevertheless.If you like it saucy, then one pound of squid is just find. But if like a touch of sauce, then use two pounds of squid. This is a recipe I just thought up.In Step 1, We're not using the tentacles, so you can reserve them for something else. You could use them though, if you don't mind them.In Step 4, be careful not to overcook the squid or it will become tough.In Step 6, you can mix the sauce and pasta together in the pan if you want.
