Ingredients

  1. 1onion (chopped)
  2. 1bay leaf
  3. 2garlic cloves (finely chopped)
  4. 3 tbspolive oil
  5. 2 tspoptional - sugar (if you like it sweeter)
  6. 1 kgcalamari rings or 5 whole squids
  7. 1 cupwhite wine
  8. 1/2 tinchopped tomatoes (425g tin). Can add whole tin depending on your preference
  9. 1 1/2 cupwater
  10. 1/3 tspseasoned or garlic salt
  11. 1/2 tspCayenne chilli pepper or 1 tsp of hot sauce
  12. 1/4 tspcreole Spice Mix (optional)
  13. 1 handfulchopped parsley

Cooking Instructions

    Prepare the squid if using whole, cut into circles.

  2. 2

    Heat the olive oil on a medium heat.

  3. 3

    Add the onion, garlic and bay leaf. Fry for about 3-4 minutes or until lightly browned.

    Add the chopped tomatos, salt and chilli pepper. Cover with lid and simmer for about 5-10 minutes. If using add sugar aswell as the creole.

    Lower the heat slightly and add the calamari rings.

    Let it simmer for around 15-20 minutes.

    Add the wine and cook for a further 35-40 minutes or so on a low to medium heat. Stirring regularly.

    Add water as and when it starts to dry. You may not need to use it all.

  9. 9

    Add the parsley about 5 minutes before heat is turned off.

  10. 10

    Check seasoning and rest for 5 minutes before serving.
