Turkey Monte Cristo Tostadas

While not exactly a Monte Cristo, this is great way to use leftover Thanksgiving turkey. It's got a creamy and sweet flavor that compliments the savory turkey. If you can't find Delice cheese you can replace it with goat cheese. It's got a similar tang. If you don't like the flavor of Delice, try Brie instead for the creaminess but with a less potent taste.
Turkey Monte Cristo Tostadas

Preheat broiler to high.

Place tortillas on baking sheet and place under broiler for 1-2 minutes to brown/crisp slightly.

Remove tortillas and spread 1 tbsp of Delice cheese and 2 tsp of raspberry preserves on each. Top each with 1/2 cup of shredded turkey.

Place back under broiler for 3 minutes or until turkey had slightly browned.
