  • 2 eachZucchini | wide
  • 1 lbGround Beef
  • 1 canCrushed Tomatoes | Italian Herbs - 28oz
  • 1/2 packagesCream Cheese
  • 1Egg
  • 1/2 cupParmesan | fresh
  • 1/2 cupMozzarella | fresh shredded

    Preheat oven to 400.

  2. 2

    Brown ground beef. Add crushed tomatoes and simmer.

  3. 3

    Cut zucchini in halves and scoop out some of the middle.

  4. 4

    Rub olive oil all over zucchini.

  5. 5

    Add egg to cream cheese, mix, and spoon a little in to each boat.

  6. 6

    Add half of the Parmesan and Mozzarella cheese.

  7. 7

    Spoon plenty of meat sauce.

  8. 8

    Add the remaining cheese.

  9. 9

    Cover with foil and bake for 30 minutes.

  10. 10

    Remove foil and bake an additional 5 minutes.
