  1. 5 cupsShredded butternut squash
  2. 1Lemon, juiced and grated
  3. 1 cupRaisins
  4. 8Dried apricots, chopped
  5. 1Apple, cubed
  6. 2 cupRicotta or cottage cheese
  7. 1Egg, lightly beaten
  8. 3 tbspPlain yogurt, sour cream, or buttermilk
  9. 1 tspGround cinnamon
  10. 1/8 tspground nutmeg
  11. 1/2 cupChopped walnuts

Steps

30 mins
  1. 1

    Preheat oven to 350°F. Grease an 11x7x2 baking dish.

  2. 2

    Toss squash with lemon juice and peel. Lay half in baking dish.

  3. 3

    Combine other fruit and sprinkle over the layer.

  4. 4

    Blend cheese, egg, yogurt, cinnamon, and nutmeg. Spread over squash layer.

  5. 5

    Cover cheese layer with remaining squash and sprinkle nuts over top.

  6. 6

    Cover dish with foil and bake till done. Around 30 to 40 minutes.
