Blend onions, pepper and tomatoes and set aside; while at it parboil rice and allow it cook till its half cooked; wash the rice and drain in a sieve and set

Heat up pot and pour in veg oil; once the oil is hot pour in the blended tomatoes paste and allow it fry for aout 3 mins stir continuously, add the tin tomatoes paste and stir continuously for another 5 minutes

Spice with curry powder, garlic and ginger paste, salt, left over chicken and maggi, stir and add little water to then simmer on medium heat for 3 minutes

Stir in rice and stir everything together; once it almost cooked, add scent leaf and lower heat. turn off heat once the rice is cooked through and water is dried up

Serve and enjoy a quick fix.
