Ingredients

22 servings
  • 2 1/3 cupflour
  • 1 1/4 cupsugar
  • 1 1/2 tspbaking powder
  • 3/4 tspbaking soda
  • 1/2 tspsalt
  • 1/4 tspnutmeg
  • 1/4 tspcinnamon
  • 1/4 tspscant - cloves
  • 2eggs
  • 1 1/4 cupbuttermilk
  • 1/2 cupoil
  • 2 1/3 cupblueberries, frozen
  • 1/4 cupturbinado or demerara sugar, optional. provides crunch.

Steps

  1. 1

    Preheat oven to 350°.

  2. 2

    Place muffin liners in muffin pan or spray pan with nonstick cooking spray.

  3. 3

    In large bowl, mix dry ingredients.

  4. 4

    In medium bowl, whisk together eggs, buttermilk, and oil. Fold in blueberries.

  5. 5

    Pour wet ingredients into dry all at once. Mix gently. Batter will be thin.

  6. 6

    Bake 18 - 23 minutes.

  7. 7

    If using turbinado sugar, sprinkle it on the muffins during the last 5 minutes of baking.
