  1. 3 lbground turkey
  2. 3/4 cupbreadcrumbs
  3. 1poblano pepper; roasted and large dice
  4. 1red bell pepper; roasted and large dice
  5. 1yellow bell pepper; roasted and large dice
  6. 1orange bell pepper; roasted and large dice
  7. 1 smallred onion; minced
  8. 2 stickcelery; small dice
  9. 4 clovegarlic; minced
  10. 1/2 cupdiced green chiles
  11. 1 tbsproasted and ground coriander
  12. 1 tbsproasted and ground cumin
  13. 1 tbspground white pepper
  14. 1 tbspMexican oregano
  15. 2 tspcayenne pepper
  16. 2 tspthyme; minced
  17. 1 stickbutter
  18. 1 pinchsalt

  1. 1

    Melt butter slowly in a saute pan. Sweat onions and celery until translucent. Add garlic and a pinch of salt. Sweat until fragrant. Cool down in fridge.

  2. 2

    Place turkey, breadcrumbs, spices, salt, cooled veggies, and peppers in a large mixing bowl and mix thoroughly.

  3. 3

    Cover and bake at 350° for approximately 40-45 minutes. Uncover and continue cooking for approximately 10-15 more minutes or until thermometer reaches 165°.
