Cheese Filled Meatball Stuffed Jumbo Pasta Shells

This is a whimsical take on pasta and meatballs. I wanted a make ahead meatball dish and the ability to easily make them from frozen. These are the result. They are also great as a family or company meal made all at once. The burst of melted cheese in the middle is a delicious surprise! Serve with a green salad and bread for a great meal.

Ingredients

  1. MEATBALLS
  2. 1 lblean ground beef
  3. 1 lbground pork
  4. 2cloves of garlic, minced
  5. 1large shallot, chopped
  6. 1/3 cupcream, heavy, light or half and half
  7. 1/3 cupfresh breadcrumbs
  8. 3 tbspromano cheese, fresh grated
  9. 1/2 tspItalian seasoning blend
  10. 1/2 tspblack pepper, and salt to taste
  11. 1 tsphot sauce, such as Frank's brand
  12. 1large egg, beaten
  13. 1/3 lbItalian four cheese blend , cut into 1 inch cubes and frozen while making meatballs
  14. 1 tspolive oil
  15. PASTA AND SAUCE
  16. 1 boxjumbo pasta shells, you will need about 18 to 20, cooked
  17. 1recipe marinara sauuce, recipe attached in direction step #9 or your favorite marinara sauce
  18. TOPPING
  19. 1 1/2 cupshredded Italian four cheese blend

Cooking Instructions

    Preheat oven to 400. Line a baking sheet with foil and spray foil with non stick spray

  2. 2

    Combine breadcrumbs, beaten egg and cream in a bowl to soak, set aside

  3. 3

    Heat olive oil in a small skillet, add shallot and garlic and cook until softened, set aside to cool

  4. 4

    In a large bowl combine ground beef, ground pork, romano cheese, Italian seasoning, salt, pepper, hot sauce, soaked breadcrumbs with all liquid and cooled shallot and garlic. Mix with a fork or your hands until well combined

    Form meatballs into an oval shape to fit inside the cooked jumbo shell

    Flatten ball to place a frozen cheese cube in the center

    Completely enclose cheese cube in meat ball

    Continue to form meatballs with chesse cubes. Place on prepared pan and bake 15 to 20 minutes just until cooked

    Place a cooked jumbo shell on work surface, put about a tablespoon of marinara sauce in shell, then fit one meatball in. Marinara sauce recipe attached below

    At this point to cook all of the meatball stuffed shells place in a baking dish large enough to hold them in a single layer, before adding them to baking dish add a layer of marinara sauce then the stuffed shells, topping with more marinara sauce and shredded cheese. Bake at 375 just until hot about 15 to 20 minutes. An alternative is to frezze the shells individually and take out as many as you want. Cover a serving dish with sauce add your shells, topping with more sauce and shredded cheese and microwave or bake until hot

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
