Ingredients

  1. 3eggs
  2. 1/3 cuplemon juice
  3. 1 tbsplemon zest
  4. 1/2 cupsugar
  5. 1/2 cupbutter (in pieces)

    Carefully beat the 3 eggs in a bowl and prepare a double broiler.

    Once the water reaches to a simmer reduce to LOW HEAT and beat lemon juice, zest, sugar, and egg mixture in the double broiler. Whisk until thick and then remove from heat.

    Gradually add the butter and let it melt. Beat for 10-15 minutes until desired creaminess is achieved.

    Strain over a bowl and then fill the curd into sterilized jars and seal them.

    It can be stored in the refrigerator for up to 2 weeks!
