Ingredients

4 servings
  • 1 cupdrained and rinsed red kidney beans
  • 1 tbspBBQ sauce
  • 1 tbspenchilada/fajita mix of your choice
  • 1 tspgarlic powder
  • 1chilli flakes to taste
  • 1/2 cupdrained sweetcorn
  • 1/3 cuptomato sauce (passata or similar - it just needs to be smooth without any other herbs in)
  • 1 cupchicken meat substitute, defrosted or fresh

Steps

    Preheat the oven to 180°C.

  2. 2

    Put your chicken meat substitute and tomato sauce in a large bowl and blend until almost smooth (I like to leave a few chunks unblended).

  3. 3

    Add the rest of your ingredients and mix thoroughly.

  4. 4

    Split and shape into 4 patties.

  5. 5

    Bake for approximately 20 minutes, or until it starts to turn golden at the edges.

  6. 6

    Serve and enjoy!
