Wanted to use up leftover cauliflower and broccoli, so created this dish. After eating it I realized it tastes a lot like broccoli cheese casserole, so it could be put in a casserole dish and baked until the cheese melts and served as a casserole or side dish, also. And I Think a plop of sour cream would make it even better.

Ingredients

  1. 3 cupCooked Cauliflower
  2. 1 cupCooked Broccoli
  3. 1 envelopeChicken flavor
  4. 2 cupCheddar Cheese -Sharp or Mild
  5. 1/4 cupWater
  6. 1 dashSalt
  7. 1 dashGarlic salt
  8. 1 dashOnion powder
  9. 1 dashParsley
  10. 1 dashBlack pepper

Steps

    Cook head of cauliflower and bunch of broccoli. Cook till soft.

  2. 2

    Mix broccoli and cauliflower in saucepan.

  3. 3

    Add water.

  4. 4

    Add seasonings

  5. 5

    Mash with potato masher.

  6. 6

    Slowly heat. Do not boil.

  7. 7

    Add cheese.

  8. 8

    Stir and heat until cheese melts. Do not leave unattended.

  9. 9

    Put soup in bowls and cover with more cheese.

  10. 10

    Microwave each bowl 30 seconds to melt top cheese.

  11. 11

    Add a bit more salt and pepper.

  12. 12

    Garnish with avocado slices.

  13. 13

    Serve and enjoy!!

Great idea for a cold winter day! It turned out delicious. I added extra chicken stock, a little rue to thicken and some brown rice to stretch out the batch.... Oh yeah, half cheddar and half Velveeta... yummy 😋
