I've always loved potato pancakes. With so many great recipes, I decided to come up with my own take.

I've always loved potato pancakes. With so many great recipes, I decided to come up with my own take.
Cooking Instructions

Blend potato and eggs until smooth
- 2
Stir in flour and baking powder, mix well
- 3
Add pepper and garlic powder
- 4
Heat cast iron skillet until water dances when sprinkled
- 5
Pour oil in skillet and heat
- 6
Drop potato mixture into oil, fry for 3 minutes, flip over fry for another 3 minutes until golden on both sides

This batch made 10 pancakes
- 8
Serve and enjoy. These are great on their own or with sour cream or what ever topping you like.
