Ingredients

  1. 1 cangarbanzos (chickpeas)
  2. 1 bunchswiss chard or rainbow chard
  3. 1/4onion, fine diced
  4. 1carrot, large diced
  5. 10grape tomatoes
  6. 1 largegarlic clove, minced
  7. 2 tbspolive oil
  8. 1 tspcumin
  9. 1salt and pepper to taste
  10. 1plain greek yogurt, optional

Steps

20 mins
  1. 1

    heat oil in skillet on med high

  2. 2

    drain and rinse garbanzos, add to oil. saute until golden about 4 mins

  3. 3

    reduce heat to medium

  4. 4

    add carrot, onion cumin, salt and pepper saute additional 4 mins.

  5. 5

    add grape tomatoes, cook until they "pop" about 3 mins.

  6. 6

    rinse well and rough chop swiss chard. add to pan

  7. 7

    as soon as chard wilts slightly, add garlic, cook additional 2 mins.

  8. 8

    add a dollop of plain greek yogurt if you like
