Simple Huevos Rancheros

Cooking Instructions

Cook your onion and garlic on med heat in a large skillet until just turning translucent.

Remove your chorizo from its casing if needed. Add to the onions and garlic, crumbling it.

Use whatever beans you like. I usually use refried pinto beans but you can use refried black or even whole beans if you like.

After the chorizo is all crumbled and cooked add your beans.

Meanwhile fry your eggs in a bit of butter salting the yolks right before serving.

Warm your tortillas and roll up.

To serve: place a scoop of the beans and chorizo on your plate top with shredded cheese of your choice and then with a fried egg. Do not forget to salt your yolk and add pepper if you like. Serve with warm rolled tortillas.
