Rooibos smoked snoek with a BBQ apricot glaze
Perfect on the Braai for entertaining over the weekend. This screams summer for me :)

Start fire by piling up coals and setting them alight. Let the coals reduce in heat until you can leave you hand above the griddle for 10 seconds. Do not leave your fire/braai unattended whilst reducing in heat.

Tear the tea bags directly on to the coals then, take the snoek out of the packaging and place skin side down on a clean griddle on the braai. Baste with the glaze/marinade continuously for 10 minutes.

Gently turn the fish over and cook for 2-5 minutes continuing to baste the fish with the glaze.

Serve with a salad or on a sandwich with a refreshing summer drink.
