This is a typical sauce from my hometown and I felt like sharing it. It can be eaten alone, with pasta, chicken legs or desalted codfish.

This is a typical sauce from my hometown and I felt like sharing it. It can be eaten alone, with pasta, chicken legs or desalted codfish.
Cooking Instructions

Peel onions, eggplant and zucchini.

Chop eggplant and zucchini (not too small) and reserve. Sprinkle some salt and mix.

Chop onions and peppers. Blanch the tomatoes in order to peel the easily.

Put oil in a pan to fry the onions and the peppers. Chop the tomatoes and reserve.

Once the peppers and onions are half cooked add the zucchinis and the eggplant. Add more oil if needed.

Add the tomatoes and stir. Season with salt and black pepper.

(Tip) If you find it to acidic, add a bit of white sugar.
