Wash the eggplants before grilling, then grill them on the stove with occasional turning, or in the oven. After grilling, peel the eggplants and mash them.

Dice the tomatoes and onion into small cubes, chop the cilantro, and crush the garlic. Add them to the mashed eggplant and mix with the remaining ingredients.

Serve in a dish and garnish with pomegranate seeds. Enjoy!
