Ingredients

  1. 8 ozlinguini, or pasta of your choice
  2. 1 clovegarlic, minced
  3. 15 ozcanned black beans, drained & rinsed
  4. 1 tbspvegetable oil
  5. 15 ozcanned diced tomatoes, undrained
  6. 1/2 cuppicante sauce
  7. 1/4 tsponion powder
  8. 1 tspchili powder
  9. 1 tspground cumin
  10. 1/4 tspdried oregano
  11. 4 ozshredded Colby Jack cheese blend
  12. 1/4 cupfresh cilantro

Cooking Instructions

    Cool pasta according to package directions. Drain.

    Heat vegetable oil in large skillet over medium high heat until hot. Add garlic. Saute for a few seconds. Add undrained tomatoes, picante sauce, black beans, chili powder, cumin & oregano and mix well. Bring to a boil, stirring occasionally. Reduce heat to low & cover.

    Simmer sauce, stirring occasionally, for 15 minutes. Remove cover. Increase heat to medium high. Cook, stirring frequently until reach desired consistently, about 5 minutes.

    Add pasta to sauce. Toss. Serve with cheese & cilantro sprinkled on top.
