Victoria Sponge Cake
Made it for work as morning tea.. was a total hit
Cooking Instructions

Preheat oven to 180C/350F

Grease and line a round cake tin (18cm) with baking paper. I usually grease the baking paper with butter and then sprinkle some brown sugar. This makes the cake crust a lovely brown color and adds flavour

Cream the butter and sugar until fluffy

Beat in eggs, one at a time..

Add in the vanilla essence

Add flour and then mix
- 7
Add the milk
- 8
Keep mixing till batter is soft and dropping consistency
- 9
Pour mixture into the cake tin... and spread out the batter with a spatula

Bake for 20-25mins or until golden brown and check with a tooth pick or skewer inserted in the middle to make sure it comes out clean

Remove from oven and place on rack to cool

Decorate with cream and add freshly cut berries

Just a very basic, everyday free-from cake recipe, easy to adapt to other flavourings. I used 7" tins in the main picture but on hindsight I should have used slightly smaller ones so I've instructed the use of 6" tins with their cooking time. If you double the ingredients you could use 7" or 8" tins instead for achieving thicker cake layers, just add an extra 15 minutes or so onto the baking time. I highly recommend you read the book for further details.I reduced the calories of the recipe listed in the book as much as possible.There are 4 important key points; if you do these properly, then you can make a beautiful sponge cake. If you use the same ingredients in the exact same order, then this is the key to not failing in mixing it.
