  • 1Red bell pepper, sliced thin
  • 8 ozSugar snap peas, sliced
  • 1/2Red onion, diced
  • 1 lbMedium size shrimp, cooked/shelled
  • 1as needed Peanuts or chow mein noodles, optional topping
  • dressing
  • 1/2 cupSoy sauce
  • 1/4 cupOr less, sesame oil
  • 1 tspSugar
  • 1 tspGinger paste or 1 teaspoon ginger powder
  • 1 tspRed pepper flakes

Steps

    Mix the dressing ingredients an set aside

  2. 2

    In a large bowl, toss all remaining ingredients, except peanuts

  3. 3

    Mix dressing with salad, tossing well to coat all

  4. 4

    Allow to marinate in the fridge for a while before serving

  5. 5

    Top with peanuts or chow mein noodles if desired
