Ingredients

  1. For the sandwich:
  2. 100 gmscombined veggies like boiled sweet corn, grated carrot and beetroot, chopped bell peppers, onions tomato and spinach
  3. 2 spoonfulcooked beans like kidney, white beans(mashed if needed)
  4. 4 slicesbrown bread
  5. 20-25 gmsgrated mozzerella cheese
  6. For seasoning:
  7. 1 tbspnblack pepper powder
  8. 1 tbspnOregano
  9. 2tspn of pepprika/chilli flakes
  10. to tasteSalt
  11. 1 dasholive oil
  12. For the smoothie chop in pieces:
  13. 2-3strawberries, blueberries
  14. 1banana
  15. 2-3 piecessweet ripe mango
  16. 2-3 piecessweet ripe papaya
  17. 1 cupplain cold milk
  18. 1 tbspnorganic honey

Steps

  1. 1

    In a mixing bowl combine the chopped veggies, beans and spray them with a dash of olive oil and add the seasoning to it. Mix and keep aside

  2. 2

    Cut the edges of the bread and add a spoonful of the veggie mix on one side of the bread

    Add a spoonful of grated cheese and cover the slice with another slice of bread

  4. 4

    Grill using an oven or sandwich maker to perfection

  5. 5

    For the smoothie simply blend together the fruits and honey in a blender

  6. 6

    Add milk slowly to ensure the smoothie does turn very runny

  7. 7

    Now serve your sandwich warm (cut in pieces if desired) with ketchup and the smoothie for a complete breakfast! Bon appetite :)

    Tips:You can even carry them packed well to work for a quick lunch

    Tips:This sandwich and smoothie is also an excellent option for your kid’s lunch box when you combine it with a handful of nuts

    Tips: Use a combination of any veggies and fruits you got in your refrigerator. The idea is to make it most nutritious. If using frozen fruits/veggies make sure you thaw them before use.

    Tips: You may also choose to use tangy yogurt or mayonnaise instead of cheese for a variation!
