In a mixing bowl combine the chopped veggies, beans and spray them with a dash of olive oil and add the seasoning to it. Mix and keep aside

Cut the edges of the bread and add a spoonful of the veggie mix on one side of the bread

Add a spoonful of grated cheese and cover the slice with another slice of bread

Grill using an oven or sandwich maker to perfection

For the smoothie simply blend together the fruits and honey in a blender

Add milk slowly to ensure the smoothie does turn very runny

Now serve your sandwich warm (cut in pieces if desired) with ketchup and the smoothie for a complete breakfast! Bon appetite :)

Tips:This sandwich and smoothie is also an excellent option for your kid’s lunch box when you combine it with a handful of nuts

Tips: Use a combination of any veggies and fruits you got in your refrigerator. The idea is to make it most nutritious. If using frozen fruits/veggies make sure you thaw them before use.
