Stewed curry green tomatoes

This makes a wonderful curry base, which you can use in making vegetable tarkari, sautéing swiss chard and placing atop quinoa or isreal couscous, or just adding to soups and or stews.
I make this at the end of summer with all my green tomatoes and freeze in small containers.

Cooking Instructions

Saute onions in butter until light brown. Add tomatoes, stir and cook until tender. Season with salt, paprika, and curry powder.

When I couldn't bother to cook, I came up with this easy yet tasty curry without using a knife.You may only be able to find a packet of curry roux to make 8~10 servings. In that case, stick to 6 servings list of ingredients for half the packet and the 12 servings list for the whole packet. It doesn't take much time to cook as you use ground meat and canned mixed beans. I make 6 servings worth for two of us, and I use the rest to make doria (rice gratin). It's perfect for doria!
