This is a great flavor combination. Great if you just want something new or summery. You can also use this for a whole chicken, Cornish hen, or for duck or other game birds.

Ingredients

  1. 1/2 smallLemon
  2. 1/2 tspCulinary grade lavender
  3. Himalayan pink salt
  4. 1Skin on, bone in chicken thigh

Cooking Instructions

  1. 1

    If you want, debone chicken thigh before you start and save bone for broth later.

  2. 2

    Cut lemon and squeeze juice on underside of thigh. Let sit for a while.

  3. 3

    Salt chicken as desired

  4. 4

    Rub lavender on both sides of chicken while cast iron skillet heats up.

  5. 5

    Cook chicken thigh in skillet until skin is crispy and inside is 165°F on your meat thermometer.

This is a lovely way to easily prepare a gourmet dish. I love herbs, and French lavender is quite a special one, though hard to find a good and simple recipe using it. This recipe is easily quadrupled to accommodate the amount of chicken thighs I normally buy...and you will want more than one piece of this elegant dish!
