Found a recipe in an old church cookbook but when I was cooking it, there was absolutely no sauce for this dish! So, after thinking some, I started throwing stuff in the pan & really just trusted my instincts. And voila! This Mess was it. Thank God my family doesn't mind being Guinea Pigs!

Ingredients

  1. 1 lbchicken pieces, boneless & skinless
  2. 2 tbspOlive oil
  3. 2 tbspbutter
  4. 4 clovefresh garlic or 2 TBSP garlic powder
  5. 1salt & pepper to taste
  6. 1/4 cupall-purpose flour
  7. 3 tbspparmesan cheese
  8. 3 tbspgrated cheddar cheese
  9. 1 cupmilk
  10. 1 packagespasta
  11. 1 packagesBroccoli florets

Steps

    Cook pasta according to package directions. Set aside.

  2. 2

    Cut chicken into 1" pieces. Set aside.

  3. 3

    Put flour, garlic powder (if using), salt, & pepper into gallon size plastic bag.

  4. 4

    Shake & thoroughly coat chicken pieces.

  5. 5

    Over medium high heat, melt butter & olive oil together. Add fresh garlic, if using, for a few seconds. Don't burn garlic! Add chicken pieces.

  6. 6

    Saute until well browned.

  7. 7

    Cook broccoli; I steamed it until al dente. Then, I added that to pan. I made sure to cut large pieces into bite size pieces.

  8. 8

    Add milk, parmesan cheese, & grated cheese. Stir gently so as not to destroy crispness of chicken.

  9. 9

    Cook awhile longer till chicken is done.

  10. 10

    Serve this Mess over cooked pasta. You're Done!

Self-employed Mommy of 2 teens who are opposites of likes/dislikes of food. One child eats like a horse & is typically a bear when it comes to food (absolutely LOVES meat/fish, veggies, & fruit). The other child eats depending on feelings/moods. Some days it's only vegetarian or vegan food. Other days, it's kids food all the way: pizza, waffles, pancakes, chicken nuggets, etc. And then, there are days when food is just not on menu, at which point, I feed only fresh veggies/fruits that are never refused. And like Mommy, we all love fresh bread! Daddy just likes being a guinea pig & the fact that there is always some good leftovers in the fridge!
