Make the sofrito with olive oil, bell peppers, onion, and garlic.

When it's halfway done, add the seasoned chicken.

When the chicken is cooked, add 2 peeled fresh tomatoes.

When the tomatoes have turned into a sauce, add a cup of white wine and let it simmer a bit.

Add 4 cups of beef broth and a bit of coloring (saffron or food coloring).

When the broth starts to boil, add the rice, about 2 cups.

Let it cook for about 15 minutes, stirring occasionally.

If the broth has reduced and the rice is still hard, add more broth gradually until the rice is cooked to your liking.
