Chop the garlic and onion into small pieces. Heat the olive oil in a pot and sauté the garlic and onion for 1 to 2 minutes.

Add the turmeric, cashews, and cauliflower cut into florets. Sauté everything for 5 more minutes.

Pour in enough water to cover the mixture and simmer gently for 15 minutes, until the cauliflower is tender.

Blend everything with an immersion blender or in a regular blender. Adjust the seasoning and add more water if needed to reach your desired soup consistency. Serve hot.

If you like, you can serve this soup with roasted chickpeas. To do this, preheat the oven to 350°F (180°C). Drain the can of chickpeas. Spread them on a baking sheet lined with parchment paper. Drizzle with olive oil and season with paprika and cumin. Bake for about 30 minutes. Sprinkle the roasted chickpeas on the soup when serving.
