This is a whimsical use for the ever popular broccoli and cheddar soup. For the best results use a soup with lots of broccoli pieces. Make your own if you like or buy a favorite one. We love broccoli and cheddar soup and this was a way to have it as a side dish but it makes a delicious lunch as well!!

Broccoli and Cheddar Stuffed Jumbo Shells

Ingredients

  1. 1 quartbroccoli and cheddar soup, chose one with lots of
  2. Broccoli pieces, sore bought or best hommade
  3. About 10 to 15 jumbo pasta shells, cooked
  4. Salt, pepper and fresh grated Romano cheese for seasoning
  5. 4 ouncesprovolone cheese, sliced
  6. as neededredpepper flakes
  7. 1 cupcooked crispy bacon or cooked crispy
  8. Pepperoni, crumbled

Cooking Instructions

  1. 1

    Preheat the broiler and line a shallow oven safe dish with buttered foil

  2. 2

    Season shells with salt, pepper and Romano cheese

  3. 3

    Fill shells with broccoli cheddar soup

  4. 4

    Top with provalone cheese and a few red pepper flakes

  5. 5

    Broil until cheese is melted and shells are hot

  6. 6

    Add crumbled bacon or pepperoni and serve hot

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
