Sprinkle chicken with pepper and cook in hot oil in large skillet or Dutch oven

Cook on Med high heat 5 minutes on each side or until done. Remove from skillet and keep warm

Add salsa and Rotel tomatoes to skillet, stirring to loosen brown bits from bottom

Stir in1/2 cup olives, currants and next 3 ingredients.

Bring to a boil; reduce heat and simmer, uncovered,10 minutes, stirring occationally.

Prepare couscous or rice and keep warm.

Return chicken to skillet; cover and simmer 5 minutes.

Place chicken on couscous and spoon sauce over chicken

Sprinkle with toasted almonds and remaining 1/4 cup olives
