Preheat oven to 375°.

Beat butter and sugar together until creamy. Add egg and vanilla and mix well.

In a separate bowl, combine flour, baking soda, salt and cinnamon and stir.

Add oats and mix well.

Add to butter mix and blend well.

Place on parchment paper on baking sheet and cook for 10 minutes. Slow to sit for 2 minutes then move to a wire rack.

For cream filling, combine all ingredients into a medium bowl. Best on low until mixed well then beat on high until light and fluffy.

Spread 1 tablespoon of cream filing between 2 cookies.
